What can we say about tapas that you don’t already know. Crunchy fried potatoes with a juicy interior bathed in a spicy sauce, “brava” like a bull. Of course, you have never eaten an equal one, because everyone makes them in their own way.

That’s the way we are, we don’t even agree on how to make potatoes. You can find them boiled, baked, fried, poached, etc. And let’s not even talk about the mythical sauce. It has more versions than Windows.

But let’s be clear, they are not potatoes with ketchup.

Nachos, perfect to share

A tapa created by chance that comes to us from Mexico. Its creator was Ignacio (Nacho) Anaya, chef of Piedras Negras Restaurant in Coahuila. One day some ladies came into the restaurant at last minute and he had nothing to serve them. He improvised a dish with what he had in the kitchen and called it “Nacho Specials”. Iberian ham croquettes, the favorite ones

It is one of the most consumed tapas in Spain, along with tortilla de patatas. It was created in France in Sun King (Louis XIV) times, but it is not known exactly by whom.

What we do know is that we love them and we eat them in many different flavours such as ham, seafood, stew, chicken, mushrooms, etc. But which is our favourite?

Well, according to Oído Cocina Gourmet study in 2021, the Spaniards favourite croquette is Iberian ham. And yours?

A recipe older than hunger. They were cooked as far back as Ancient Egypt. But if we are being punctilious, hot wings were created in Buffalo in 1935. And again by chance.

Teressa Bellisimo, owner of the Anchor Bar restaurant, mistakenly ordered chicken wings instead of necks (she used them to make spaghetti sauce). As she did not want to waste the food, Teressa served them as an appetizer and they were a hit.
