Nachos, perfect to share

A tapa created by chance that comes to us from Mexico. Its creator was Ignacio (Nacho) Anaya, chef of Piedras Negras Restaurant in Coahuila. One day some ladies came into the restaurant at last minute and he had nothing to serve them. He improvised a dish with what he had in the kitchen and called it “Nacho Specials”. It is one of the most consumed tapas in Spain, along with tortilla de patatas. It was created in France in Sun King (Louis XIV) times, but it is not known exactly by whom.

What we do know is that we love them and we eat them in many different flavours such as ham, seafood, stew, chicken, mushrooms, etc. But which is our favourite?

Teressa Bellisimo, owner of the Anchor Bar restaurant, mistakenly ordered chicken wings instead of necks (she used them to make spaghetti sauce). As she did not want to waste the food, Teressa served them as an appetizer and they were a hit.
