History and provenance of Grimbergen beer
The origins of this Belgian beer date back to the year 1128, in the middle of the Middle Ages, the monks of the Norbertine order settled in Grimbergen Abbey, where they began to prepare their craft beer in an improvised factory.
20 years later and after the Grimbergen war, the surviving monks rebuilt the abbey stone by stone, since due to the revolt against Count Brabant it was quite battered.
In that same year, the monks perfected their original beer recipe thanks to the refinement of some production techniques that were transmitted for more than 6 centuries. However, in 1566 Grimbergen Abbey was destroyed again and in 1629 rebuilt with a new image.
As if that were not enough, the abbey and its brewery were again the victims of the calamities of time during the French revolution, the expropriation of the church and the expulsion of the order. However, the abbey prevailed and to this day the monks continue to produce their famous Belgian beer.
Beer Characteristics
The double Grimbergen is a dark amber colored beer with a sweet flavor reminiscent of caramel. In fact, its composition is made from a selection of different malts that are mixed together with cane sugar, the star ingredient that provides that sweet flavor, with a deep aromatic hue for the nose.
From the taste point of view, it has a soft touch of liquorice, this provides a soft bitterness on the palate with a sweet and sour touch combined with the special character of the roasted malt.
Finally, its foam is dense, durable and light brown.

the phoenix symbol
The phoenix is a mythological bird with the ability to rise from its ashes, this symbol was chosen by the Norbertine monks to represent the resurrection of the abbey, just as this creature did in their myths.
On the bottle itself you can find a label with the same image of the abbey’s phoenix with the motto “Ardet nec consumitur” which means “Burnt but not consumed” another reference to the myth and history of the Grimbergen abbey and its constant rebirth.
